Demand does not rise during Ramadan so much as compress. Weeks of ordinary evening trade collapse into a sharp peak around iftar and a second, longer one late at night.

For kitchens that means the forecasting problem inverts: the risk is not a quiet Tuesday but a catastrophic sell-out at the exact moment nobody can wait.

Surplus does not disappear during Ramadan. It moves to two in the morning.

So the mechanics shift with it. Happy hours cluster after the late peak, pickup windows stretch past midnight, and full-menu savings do the quiet work of being reliable when everything else is unusual.
