Performance work is usually justified with abstractions about engagement. In food it is concrete: somebody is hungry, standing somewhere, deciding between you and the shop in front of them.

So the first screen is built to paint before the data arrives, and images load as they approach the viewport rather than all at once. A feed that renders in under a second with three offers beats one that renders in four with thirty.

Nobody waits for a discount. They walk into the place they were already standing next to.

The unglamorous truth is that most of our conversion work has been latency, not layout.
