A bakery cannot under-bake. An empty case at nine in the morning costs more than a full one at seven in the evening, because the morning rush is where the margin lives.
So the case is built for the peak, and the last hour is a negotiation with arithmetic. Bread firms up. Pastry loses its edge. None of it becomes unsafe, and all of it becomes harder to sell at the price on the label.
This is why bakeries were our earliest and most enthusiastic partners. The surplus offer maps onto something they already do informally — discount the case at close — and gives it a city-wide audience instead of whoever happens to walk past.
The croissant that costs a third less at eight in the evening is the same croissant. It has just stopped being a breakfast item.
