Better prep beats better discounting.
The best outcome for a partner is needing our surplus feature less over time.
A marketplace that profits from waste has an awkward incentive: the more a kitchen over-prepares, the more it lists. We would rather be honest about that than pretend the tension does not exist.
In practice partners who use the console seriously start prepping differently. Seeing what the last hour was worth, night after night, is the first real feedback most kitchens have had on that decision.
If a partner’s surplus listings shrink while their full-menu orders grow, that is a success, not a loss.
Which is another argument for four mechanics rather than one. A business built solely on surplus would quietly need its partners to keep making the same mistake.
