Some items are worth losing rather than marking down, and good operators know exactly which.

A discount is not free even when the alternative is disposal. It sets an expectation, and for a signature item that expectation can outlive the offer by months.

Which is why the console is item-level rather than menu-level. An operator can protect the dish their reputation rests on and move the four things that simply did not sell.

The item you are known for is the one item you should almost never discount.

The mistake we see most often is a new partner discounting their hero dish first, because it is the one they are proudest of. It works immediately and costs something slowly.
