Cloud kitchens have no walk-in trade.
A kitchen with no dining room cannot discount at the counter, because there is no counter.
Delivery-only operators face the surplus problem without the traditional escape valve. There is nobody walking past at closing time to sell the last four portions to.
They also run multiple brands out of one line, which means surplus is spread across menus rather than concentrated in one. Small amounts, several brands, same physical kitchen.
For a cloud kitchen, a marketplace is not a channel among several. It is the only place the last hour can be sold.
That makes them natural users of both extremes: full-menu savings for reach against established brands, and surplus offers for the tail nobody else can see.
